Apple Pro Training Series

I just got a copy of "Apple Pro Training Series : Logic Pro 7 and Logic Express 7" from Peachpit Press, and so far I'm impressed. It comes with a DVD with files that you use to work through the chapters.

Each chapter explains what you're going to do and approximately how long it's going to take. Then it steps you through different tasks.

I don't think it's a good reference book if you just want to know how to do a specific thing, but if you're starting from scratch I think it's a good book (though if you just want to start recording you have to wait a couple of chapters!)

They include the 30-day trial version of Logic Express on the DVD too (though you can get that online.)
